Banku and okro stew
£19
Hot
Banku is a fermented corn-and-cassava dough cooked into a smooth, slightly sour ball — Ghana's coastal staple. Here it comes with okro stew: okra cooked down with palm oil, smoked fish, crab and tender meat into a rich, silky stew. The slight tang of the banku against the deep stew is the whole point.
How to eat it: Tear a piece of banku, dip generously — okro stew is meant to coat it.
Good to know
- What does banku taste like?
- Mildly sour from fermentation, soft and smooth. It pairs with fish, pepper and rich stews.
- Is okro stew the same as okra soup?
- Ghanaian okro stew is thicker and cooked with palm oil; Nigerian okro soup (also on our menu) is lighter and eaten with pounded yam or eba.
