Boiled plantain with palaver (kontomire) sauce
Gluten free
Boiled plantain with palaver sauce (kontomire stew): cocoyam leaves — or spinach — cooked down with palm oil, onion, pepper and often egusi and smoked fish into a deep green stew. Served with boiled plantain, egg and avocado. Earthy, rich and one of Ghana's great vegetable dishes.
Good to know

- Cocoyam (taro) leaves — the Ghanaian equivalent of spinach, with more body.
- Vegetarian?
- Ask — the stew is often cooked with smoked fish; we can leave it out.
