Ghanaian and Nigerian cooking: fufu with goat, light or groundnut soup, banku with okro stew or grilled tilapia, jollof and waakye, egusi, ogbono, pepper soups, suya, kenkey with fried fish, and more. Dishes come with your choice of swallow — fufu, banku, omo tuo, kenkey, eba or pounded yam.
