Jollof rice: long-grain rice cooked down in a smoky tomato, pepper and onion base until every grain is stained red and the bottom catches — that slight char is the mark of proper jollof. With chicken or beef. We stay out of the Ghana-versus-Nigeria argument; ours is just right.
