Fufu and goat soup at African Base, Nottingham

Fufu and goat soup

£19

Fufu with goat light soup, groundnut soup or palm-nut soup

Hot

Fufu is the great Ghanaian swallow: cassava and plantain pounded until smooth, elastic and glossy, served as a soft mound in a bowl of soup. At African Base it comes with goat meat in a light soup — a clear, peppery tomato-and-ginger broth — or with groundnut (peanut) soup or palm-nut soup if you prefer. The goat is slow-cooked on the bone until it falls apart.

How to eat it: Pinch a piece of fufu with your right hand, dip it in the soup and swallow — you don't chew fufu. A spoon is fine too; nobody minds.

Good to know

What is fufu made of?
Ours is cassava and plantain, pounded together. It's naturally gluten-free.
Is fufu and goat soup spicy?
Light soup carries real pepper. Ask for it milder when you order and we'll tone it down.
Can I have a different soup with my fufu?
Yes — goat light soup, groundnut soup or palm-nut soup, same price.
