Fufu and light chicken soup at African Base, Nottingham

Fufu and light chicken soup

£16

Hot

The lighter sister of goat soup: chicken simmered in Ghanaian light soup — a thin, bright broth of tomatoes, onions, ginger, garlic and pepper — served with a mound of fresh fufu. It is the bowl Ghanaians reach for when they're under the weather, and the one to order if you're new to West African food.

How to eat it: Fufu is swallowed, not chewed: pinch, dip, swallow. Drink the soup from the bowl at the end.

Good to know

Is chicken light soup good for beginners?
It's the gentlest soup on the menu — ask for mild and it's a warm, gingery chicken broth.
Is it gluten-free?
Yes. Fufu is cassava and plantain; the soup has no flour.
