Kenkey
£14
With fried snapper or bream and pepper
Kenkey is a fermented corn dough, wrapped in corn husk or plantain leaf and steamed for hours until dense and tangy. At African Base it is served the classic way: with crisp fried snapper or bream, fresh ground pepper (a fierce tomato-and-chilli sauce) and shito, the smoky black pepper sauce. Ghana's ultimate street food, done properly.
How to eat it: Break the kenkey, take a piece of fish, dip both in the pepper. Shito on everything.
Good to know
- Is kenkey the same as banku?
- Both are fermented corn doughs, but kenkey is wrapped and steamed so it's firmer and tangier.
- How hot is the pepper?
- Proper hot. Ask for less if you need to.
