Tuo zaafi — TZ — is the pride of northern Ghana: a soft, smooth swallow made from maize (sometimes with cassava) served with ayoyo, a slippery green soup of jute leaves, and a spiced meat stew on the side. It is lighter than fufu and a completely different flavour — earthy, green and peppery.
